MAKES 6 TO 8 PATTIES | $0.53 TO $0.71 PER SERVING
The Quinoa & Mushroom Burgers in my first book have been a big hit with my readers, but they are a bit time-consuming to prepare, so this burger recipe is my speedy alternative! It’s loaded with fiber and protein from black beans and lots of flavorful veggies, to truly earn the name of a “veggie” burger. I prefer the texture of these burgers when they are pan-fried, but I bake them more often because you can finish cooking the whole batch in less than 30 minutes. Feel free to double this recipe and freeze the extras for a quick and easy weeknight meal.
1-1/2 cups cooked black beans (see page 78) or 1 (15-ounce) can, rinsed and drained
1 cup gluten-free rolled oats
1. teaspoons fine sea salt
1 carrot, chopped
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon garlic powder
1 red bell pepper, diced
1/4 red onion, diced
1/2 cup loosely packed fresh flat-leaf parsley, chopped
Coconut oil, for frying (optional)
6 to 8 high-quality buns or butter lettuce leaves
Your favorite toppings such as arugula, avocado, and red onion
1 Preheat the oven to 350°F (if you plan to bake them) and line a baking sheet with parchment paper.
2 In the bowl of a large food processor fitted with an “S” blade, combine the beans, oats, salt, carrot, cumin, chili powder, garlic powder, bell pepper, onion, and parsley and process until a uniform mixture that sticks together is
created. The mix shouldn’t be supersmooth and may even resemble the texture of ground beef.
3 Use a 1 ⁄3-cup measure to scoop the burger mixture and use your hands to press into patties about . inch thick, making 6 to 8 evenly sized patties. Arrange in a single layer on the prepared baking sheet.
4 To bake: Bake for 15 minutes, then gently flip with a spatula and bake for 10 minutes more. The patties are done when the outside is dry and crisp, but the inside is still tender.
5 To pan-fry: Heat a small amount of coconut oil in a cast-iron skillet over medium heat and place a patty in the center of the pan. Cook for 4 to 5 minutes, until the spatula easily slides under a crisp side, then flip and cook the other side for another 4 to 5 minutes. Repeat with the remaining patties, greasing the pan as needed to prevent sticking.
6 Serve warm with toppings on a bun or in a lettuce wrap. Store leftovers in an airtight container in the refrigerator for up to 1 week, or in the freezer for up to 6 months. (Be sure to place parchment paper between each patty to prevent sticking.) To reheat, simply heat the burgers in a skillet on both sides until the centers are warm.

Detox has become somewhat of a fad, and often not a healthy one. There are numerous juice bars popping up that suggest that we sip nothing but green juice for 5 days -which yes, will detox you, but also does not work for families, those of us that do intensive workouts and too often than not, it will confuse the metabolism that will slow down as it tries desperately to preserve those limited calories. This book gets it right -clean, healthy eating that is good for the body and still has enough calories to satiate the whole family.
The book begins with some basic and practical information beginning with overcoming excuses for healthy eating , how the book will help you detox, how to use the book, time saving tips, an easy to follow shopping list or one for the budget conscious, and even a started 5 day meal plan idea. It is all easy to read, and encouraging without being condescending.
There are then 8 categories: Shakes and Morning favorites, salads and dressings, soups and sides, game day appetizers / on the go snacks, comfort food and casseroles, skillets and stir fries, sweet treats and finally healthier homemade staples – which between them feature 100 recipes. Also a stand out for this book – is there is a complete nutritional guide to each meal at the back showing calories, fat content, carbs, fiber and protein. I have so many cookbooks and interestingly the vast majorities in this category fail to include any nutritional information at all. It is different not having them attached to each recipe but also somewhat ingenious as if you are looking for a low carb or high protein meal -you can simply flip to these pages and let those guide you to your ideal dish.
Another stand out -simple to make meals and simple to source ingredients – nothing weird here, no need to source sea vegetables or Irish Moss here (yes I have other books that call for both !). The cashew butter spice muffins are delicious (flour and refined sugar free) ; the Thai salad is my go to for lunch and honestly I make this even simpler as Trader Joes serves pre shredded cabbage and carrots ready to go, the chickpea and avocado egg salad is also really fun and simple to make. I am no expert in the kitchen, so these were simple, easy and most importantly quick to make. I was also excited that my kids like the strawberry and cream freezer pops which are a nice alternative to the junk in the ice cream aisle.
This books stands out for its simplicity and the fact that those of us short on time but wanting to feed everyone in the family healthy meals that will actually be eaten, have so many choices. Great book, great price and love the concept!
Two years ago my 10 year old vegetarian daughter was diagnosed with an autoimmune condition. I had several friends who were struggling with autoimmune issues and two had made changes to their diets with great success. So off we went on this adventure! Now, to say I am not the most inspired cook would be an understatement, but I am a fierce researcher and set out with great determination to find child friendly, easy to produce recipes for our new life. For the next six months I scoured Paleo blogs and cookbooks, and as anyone who has made these changes knows I was often in the kitchen six hours a day! However, when it came time to eat...... my daughter was often hard to find. Why? Because her vegetarian heart was heavy with all the meat and bone broth that the recipes contained and I was exhausted from all the work they took to get on the table!
Enter Megan Gilmore! I found her blog detoxinista.com one day while I was searching for a treat to bring to a picnic. The post for her delicious brownie bites came up and we have not stopped eating since! I loved the way she shared her days as a junk food junkie and even described the flavor as similar to a Keebler fudge filled cookie she enjoyed as a child. I had a good feeling about her right away. The bites were delicious, my daughter loved them and I ordered her first book "Everyday Detox". I started with the cauliflower fried " rice", amazing! Ready in under 30 minutes and it tasted exactly like takeout fried rice! Suddenly my daughter was back at the table, fork in hand, smile on her face at meal time. It is hard to pick just a few favorites from that book but if I had too I would say blender banana pancakes, baked stuffing loaf, and broccoli cheese soup just for starters. Then just when I thought things could not get any better I saw that this 2nd book was on the way. Honestly I did not think it could be any better than the first, but I was wrong. Even better!!! Roasted Zucchini Pesto Lasagna, a great Vegan shepherds pie and the best dessert we have had yet...deep dish chocolate chip cookie!!!
Megan is a mom and the flavors in her recipes really project health, home, and comfort. Also, she understands that Moms with young children need simple uncomplicated recipes for everyday. Megan Gilmore's recipes were just the prescription we needed, my daughter is doing great and we can enjoy all our favorite flavors while improving our health. I highly recommend this book!!!
